Because of kosher diet reasons (which can be complicated) I and thousands of people, bakeries, and cookie companies use non-dairy margarine to make cookies that come out pretty darn amazing. I am not a expert or professional baker, and not knowing exactly what was wrong with the cookies, the problem may have been becasue the margarine was not soft enough. Another possibility is that you used margarine from a tub--a big no no(this is something many people neglect, but so important--use the stick!). Maybe you overmixed the batter or the tempature in your oven was off.
