I used this recipe from Epicure for the pizza dough, and put it all on one big cookie sheet greased with a little olive oil and sprinkled with some cornmeal.
PIZZA DOUGH
1 tsp. sugar
1 1/2 tbsp. instant yeast
1 c. warm water
2 tbsp. olive oil
1 tsp. salt
1 1/4 c. flour
1 c. whole wheat flour
2 tbsp. oil
Combine sugar, yeast, and water, and let it rise for 15 minutes. Add olive oil, salt, and flour to form a ball. Knead for a few minutes, then grease with oil and place in a bowl. Cover with a damp towel and place in a warm spot for 45 minutes. Punch it down, roll it out and lay on a pizza pan. After you've added your toppings, bake at 450 F for 20-25 minutes.
On one side of the pizza, I put pepperoni, onions, mushrooms, and mozzarella. On the other side, I loaded up with veggies: spinach, mushrooms, onions, fire-roasted peppers, and sun-dried tomatoes along with some feta and mozzarella. Oh dear, was it ever good!!!
(This picture was taken pre-mozzarella, so you can see the toppings. And then I forgot to take a picture of it after it came out of the oven, but you all know what pizza looks like, so I don't think it's a big deal.)
For dessert, Geneviève and I whipped up a little fruit pizza. I googled the recipe, and sort of mish-mashed a few that I found online, adding my own little touches as well. Here's what I came up with:
FRUIT PIZZA
1/2 c. butter
3/4 c. sugar
1 egg
1 1/4 c. flour
2 tbsp. cocoa
1 tsp. cream of tartar
1/2 tsp. baking soda
1/4 tsp. salt
Cream butter, sugar and egg. Add remaining ingredients and mix well. Press onto a pizza pan and bake at 350 F for 10-12 minutes. Let it cool.
8 oz. cream cheese
1/4 c. icing sugar
1 tbsp. Summer Berry Fruit Dip Mix
1 tsp. vanilla
Cream ingredients and spread over cookie crust.Arrange your favourite fruits on top.
1/4 c. sugar
pinch of salt
1 tbsp. cornstarch
1/4 c. juice (I used strawberry/banana juice)
1 tbsp. lemon juice
2 tbsp. water
Put sugar, salt, and cornstarch in the bottom of a pot. Combine remaining ingredients in a cup and slowly add to the dry ingredients, whisking well to keep the cornstarch from clumping. Bring to a boil for 1-2 minutes, then let it cool and drizzle over the fruit pizza. (Or scrap this glaze entirely and drizzle some melted chocolate overtop instead. Or do both.)
There's me and my mini-me (she had a different shirt, but she wanted to look like me, so put on her pink shirt, jeans, and matching apron!) The fruit pizza was yummy... I haven't made one in years, but you really can't go wrong with a chocolate cookie crust, cream cheese middle, and fruit on top. Yay for pizzas! (and pot roast!)
