Last night I watched Jamie Oliver's "Food Revolution" and was disgusted by what people are feeding their children! He was on Oprah yesterday as well and made some easy, healthy, breaded chicken that looked delicious, so I decided I would try out a few of his recipes this week.
CRUNCHY GARLIC CHICKEN (with some minor adjustments from me)
2 garlic cloves, peeled
zest of 1 lemon
8 unsalted soda crackers
2 tbsp. butter
1 handful parsley
1/4 c. flour
1 egg, beaten
3 chicken breasts, flattened
olive oil
Combine first 5 ingredients in a food processor and pulse until it forms crumbs. (The butter made it too goopy and hard to get onto the chicken later, so I would leave it out next time.) Sprinkle flour on both sides of the chicken breasts, then dip each one into the beaten egg and then into the crumb mixture. Heat olive oil in a frying pan over medium-high heat and place chicken in the pan, cooking for about 4 minutes per side. (You could also bake at 475 F for 15 minutes instead.)
EVERYDAY GREEN CHOPPED SALAD (half-recipe, with some tomatoes added)
2 green onions
1/4 cucumber
1/2 handful of basil leaves (I didn't have any today)
1 avocado
1/2 head of lettuce
1/2 handful of alfalfa sprouts, rinsed
1/4 c. cheddar cheese, cubed
Dressing:
3 tbsp. olive oil
1 tbsp. red wine vinegar
1/2 tsp. prepared mustard
salt & pepper
Slice and dice everything and toss with dressing.
SWEET POTATO FRIES
1 sweet potato, peeled and cut into french fry pieces
olive oil
Arrange sweet potatoes on parchment-lined baking sheet. Drizzle with olive oil. Bake at 400 F for 30 minutes, flipping once. Serve with curry mayo (mayo + curry powder).
This was delicious. And healthy. The only thing I would change is the butter in the chicken - it really wasn't very crumbly, so it made it a little complicated to get it to stick to the flour/egg on the chicken. But I just sort of pushed it on and hoped for the best, and it was awesome. The salad was great (the full recipe would make a very large batch), and the sweet potato fries are one of our favourite side dishes. I'm not sure which recipes I'll try out tomorrow, but I look forward to watching next week's episode of "Food Revolution" and hopefully others will also be inspired to keep an eye on what goes onto our plates and into our bodies.
