I'll stick to the old Greek chicken, thank you very much

Well, tonight we carried on with Cat Cora's 7 day meal plan and tried the Greek Cinnamon Stewed Chicken. I'm not sure what makes it Greek, but when I think Greek, I think lemon and oregano and mint and feta and olives.... not cinnamon and tomato paste. And I think tonight's recipe goes to show, "If it ain't broke...."

It wasn't a bad meal. It was just an okay meal. The cinnamon isn't overpowering, but it does give a nifty little tingle in your mouth. The kids ate it with no complaints, but no fanfare either.

My husband said, "Is this another Cat Cora recipe?" (meaning, "Isn't she supposed to be an Iron Chef, and therefore shouldn't this be a lot more spectacular?"). I told him that she designed this meal plan for a family whose mother only knew how to make 3 meals that she's been rotating for 10 years. My daughter said, "Only 3 meals? You know how to make more than that. You know how to make 5 or 6 or even 8 meals." Thanks honey.

Next time we're feeling like some Greek cuisine, the cinnamon will stay in the pantry, and I'll make this instead:

GREEK CHICKEN ROLLS
1/2 c. fresh spinach, chopped
1/2 c. feta cheese, crumbled
1 tbsp. Greek or Souvlaki Seasoning
2-3 tsp. olive oil
3-4 chicken breasts, pounded flat

Combine spinach, feta, Greek seasoning, and olive oil. Spoon onto each chicken breast and roll them up. Sprinkle with sea salt and lemon juice, and bake at 400 F for 40 min.
Or if you're lazy, lay chicken breasts in a pan, squirt some lemon juice and Greek seasoning on them, cut a slit down the middle and stuff in some feta and spinach. Take that, Iron Chef.

  1. I would love to know what those 3 meals that that woman could only make were.....any ideas?

  2. One was rice and chicken.... her kids said she serves it 3-4 times per week! I don't think she mentioned the other 2 meals.

  3. I think your recipe sounds Awesome.. I am adding it to my recipes!!! I am with the kids on the bean salad... never was/will be a favorite of mine! lol
