I made myself some couscous for lunch the other day - nothing fancy, just boiled 1 c. water (with some Vegetable Bouillon) and then stirred in 1 c. couscous, covered it and removed it from the heat. After 5 minutes, fluff it up with a fork and add whatever you like - I put:
- juice of half a lemon
- drizzle of olive oil
- green onions
- cucumber
- tomato
(usually I put feta cheese too, but I didn't have any)
I decided to make it look pretty on my plate, so I served it in an avocado bowl.
Ta da! A healthy lunch in 5 minutes. Take that, McDonald's!
