This is my all-time favourite dessert. My mom always made this when we were kids, and now I'm sharing this family favourite with you!
MOM'S BUTTERSCOTCH PIE
1 pie crust (graham or regular cooked pie crust)
2 tbsp. flour
1 c. brown sugar
2 egg yolks (reserve egg whites for meringue)
1 tbsp. butter
1 c. milk
1 tsp. vanilla
In a saucepan, stir together flour and brown sugar. Add egg yolks and butter and stir over medium-low heat until sugar melts. (The mixture should sort of form a ball.) Gradually whisk in milk, just a little a time, stirring well to prevent lumps. Add vanilla. Continue stirring until mixture starts to bubble. Gently simmer for a few minutes until thickened. Pour into crust. Beat egg whites until stiff (I add a little bit of sugar and vanilla too. You can also add an extra egg white if you like lots of meringue.) Spread over pie filling, and bake at 350 F for a few minutes, just until meringue is golden.
(This picture does not give this pie justice. The first slice never comes out well, but I didn't want to fiddle around and try to get a better picture - I just wanted to eat my pie!!)
