Kathy's Favourite Christmas Cookies

My mom always made yummy treats at Christmas time, but my absolute favourite were these simple little shortbread cookies called "Cookie Nests". They are so easy to make, and to me it's just not Christmas without them!

COOKIE NESTS
1 c. butter
2 egg yolks
1 tsp. almond extract
1 c. icing sugar
1/4 tsp. salt
2 c. cake flour
rosebuds
Cream butter and mix in egg yolks, almond extract, and icing sugar. Sift together flour and salt and mix into butter mixture. Roll into balls and lay on a parchment-lined baking sheet. Gently press a rosebud into the centre of each cookie. Bake at 350 for 10-12 minutes.
