Mexican Meal (complete with a mini margarita!)

My absolute favourite ethnic food is Mexican food.  Chili and lime make me happy.  Margaritas do too.  Here's what we had for supper tonight:

CORN & BEAN SALAD
1 c. frozen corn, thawed
1 c. black beans, rinsed and drained (use a whole can and save the extra for the taco recipe below)
1 avocado, diced
2 tomatoes, diced
cilantro, chopped
juice of 1 lime
Epicure's Chili Lime Sansel (or some salt and pepper)

Toss together and serve.

BEEF & BEAN TACOS
1 lb. ground beef
taco seasoning
salt
1 can kidney beans, rinsed and drained
1 pkg. Refried Beans mix
2/3 c. water
1/2 c. black beans, rinsed and drained
grated cheese
shredded lettuce
diced tomato
salsa

Brown beef. Drain and season with taco seasoning and salt. Simmer kidney beans with water and Refried Beans mix. Purée and add to beef.  Stir in black beans. Serve in taco shells with your favourite toppings.
I could eat a whole plateful of that salad, it's so delicious.  And if I weren't breastfeeding, that margarita would have been a whole lot bigger!
