Maple Salmon over Sautéed Spinach

This is one of those recipes that isn't really a recipe - there are no measurements, but it's so easy to make and it's delicious and healthy too!

MAPLE SALMON OVER SAUTÉED SPINACH
salmon filets
salt & pepper
pure maple syrup
olive oil
1 onion, sliced
3 garlic cloves, chopped
1 bag of baby spinach
white wine

Place salmon in a baking dish, sprinkle with salt & pepper, and drizzle generously with maple syrup.  Bake at 375 F for 15-20 minutes (to be honest, I didn't time it so I'm completely guessing at how long I had it in there!)
In a frying pan, sauté onions in oil until they are soft.  Add garlic, spinach, and a splash of white wine and cook until the spinach wilts down.  Serve the salmon on a bed of sautéed spinach.
