Little Rolls of Heaven You Can Eat

That's what my friend Jacqui calls my buns. I mean, my Saskatoon Cinnamon Buns.

I'll post the picture later, but basically I followed the same Cinnamon Bun recipe I used last time, with a few modifications:

SASKATOON CINNAMON BUNS
1 tsp. sugar
2 1/4 tsp. (1 pkg.) instant yeast
1/2 c. warm water
1/2 c. milk
1/4 c. sugar
1/4 c. butter
1 tsp. salt
2 eggs, beaten
3 1/2 c. flour
Mix together sugar, yeast, and warm water till yeast dissolves and foams. Heat milk till it just starts to bubble, then add in sugar, butter, and salt till melted. Add to yeast mixture, along with eggs (add them slowly so they don't cook.) Gradually add flour and form a ball, kneading for about 5 minutes. Cover and let it rise for an hour.


Meanwhile, combine 1 tbsp. cinnamon and 3/4 c. brown sugar in a bowl and set aside. In a saucepan, heat 2 c. saskatoon berries with about 1/3 c. brown sugar & cinnamon mixture. Simmer over low heat until thickened.


When dough has risen, punch it down and roll it into a rectangle on a floured surface. Brush with melted butter, then spread saskatoon mixture across the dough. (It likely won't cover the entire dough, but just make sure it goes in a row all the way across so that each bun will have some saskatoons.) Sprinkle with remaining brown sugar & cinnamon. Roll up and slice into 12 pieces. Lay in a parchment-lined baking dish and bake at 375 F for about 15-18 minutes.

Jacqui was right, these were little rolls of heaven you can eat!!
