Last night I made Jamie Oliver's Salmon Tikka recipe. It was quick, it was easy, and it was tasty. What more can you ask for?
SALMON TIKKA
1 salmon filet (boneless, skinless)
1 tbsp. Tandoori Seasoning
1 tbsp. olive oil
4 tbsp. plain yogurt (I used Balkan so it was nice and thick)
1/2 cucumber, seeded and coarsley chopped
1 chili pepper (I used a jalapeno), seeded and finely chopped
juice of 1/2 a lemon
sea salt & pepper, to taste
cilantro, to garnish

Slice the salmon in thin strips. Mix together Tandoori seasoning and olive oil to make a paste and brush it over the salmon (I just brushed it on one side.) In a bowl, mix together yogurt, most of the cucumber and chili pepper (saving a little bit for garnishing at the end), lemon juice, salt and pepper. Warm the naan in the oven while you cook the salmon in a hot grill pan for about 1 1/2 minutes per side. To serve, scoop a generous helping of the yogurt mixture on top of each piece of naan, and top with a few strips of salmon. Sprinkle with cucumber, chili pepper, and cilantro.
