First I made some sushi rolls with crab meat, avocado, green onion (just the green part), and thinly sliced yellow apples.
Then I made a Chocolate Tiramisu from a little recipe booklet I got in the mail. You can download the booklet or go to the Simply Homemade website to search for other great recipes. It was surpisingly simple to make. Instead of soaking the ladyfingers in coffee, I opted to use my Tiramisu Venezia Rooibos tea from Sisters Leap Exceptional Teas. The filling tastes sooooo good.... I can't wait to try out the finished product!
You just mix together the marscapone cheese, condensed milk, and whipped cream (with vanilla), and spread half of it over a layer of ladyfingers that have been soaked in the coffee/tea.
Drizzle melted chocolate over top and swirl it all together.
Place another layer of tea-soaked ladyfingers,
and top it off with the remaining cheese mixture and chocolate.
I also made up some fresh salsa (a few fresh tomatoes - diced, 1 green onion, and 2 tsp. Caliente Salsa mix) and I'll make up some guacamole just before the guests arrive. Then I'm going to make up a spinach dip that is so easy to make:
SPINACH DIP
1 c. mayo
1 c. sour cream
1 pkg. frozen spinach, thawed, drained, and chopped
1 can waterchestnuts, drained and chopped
2 tbsp. Seasoning for Spinach Dip
Mix it all together and serve it in a bread bowl.
It's after midnight right now and my brain is mush, so I can't remember what else I might have on the menu for tomorrow night. Time for some sleep, and I'll post whatever picture and recipes I've left out later this weekend. Good night!
