Yay for beans!

This is short and sweet, and there's no photo to go with it. I had no idea what to make for supper tonight (no meat thawed out, no pasta... ahhhh!) I opened my cupboard and the only thing somewhat substantial was rice and beans. I also found some frozen pork souvlaki in the freezer (I knew those would come in handy when I bought them on sale!) So I made rice and souvlaki for the kids, and for the adults we mixed this bean recipe in with our rice:

CAMP BEANS (my sister made these over the camp stove this summer and they were delicious!)
1/2 onion, diced (I used a red onion)
1 garlic clove, minced
1 can black beans, drained but not rinsed
1 c. frozen corn
lime juice
soy sauce (I used Worcestershire cuz I ran out of soy sauce)
paprika
cumin (I used Cuban Seasoning)
cilantro (I forgot to use any, so I guess it's optional)

Sauté the onions and garlic in some olive oil until soft. Stir in the rest of the ingredients and let it simmer for a bit. Stir in cilantro before serving.

Quick and easy, and everyone's belly is full. Now I'm off to pick up some frozen pizzas for lunch tomorrow... I've got a house full of kids since there's no school in the afternoon, and I know lunch is going to be crazy if I have to spend any time preparing it, so I figure frozen pizza is a wise decision!
