Zucchini Fettucine


This is short and sweet... it's the long weekend, and we're walking to McDonald's for some celebratory icecream!!

Tonight I made Zucchini Fettucine from Rachael Ray. I only used one medium-large zucchini and there was plenty of it, and I added some fresh tomatoes on top, but otherwise I followed her recipe exactly. We couldn't convince my son that the green things were cucumbers (the only green thing he likes) so he was less than impressed with this meal, but otherwise it was very tasty, and ridiculously easy to make.

WOWOWOW... all veggies, no cheese/sauce etc. Might have to try this. I have 3 zucchini sittin on my cupboard as we speak!

Thanks, I'll give it a try too (though was hoping it was one of those recipes that uses zukes instead of the pasta). Love when you post vegetarian recipes!

Yeah, vegetarian recipes are few and far between at my house (unless it's just a salad). This recipe was very good, although the kids didn't eat the "green sauce". I think 2 zucchinis would have been way too much. The fresh tomatoes added alot of flavour/texture too, but the garlic/lemon/mint was delicious. We sprinkled parmesan cheese on top too.
