Sunday Salad Game

We haven't been playing this game for the last few weeks, since I was away on holidays and had limited internet access. But now that I'm home from holidays (and likely 5 lbs. heavier) I think it's a good time to bring back the Sunday Salad Game!

I never got a chance to make a salad using the ingredients that were suggested last time (couscous, avocado, chickpeas, fresh dill), but a friend posted this recipe on my Facebook page and it sounds pretty delicious:

2 c. chicken stock
2 c. couscous
Prepare as per box directions.

Add-ins:
Diced avocado
1 chopped tomato
1/2 red onion, diced (sliced green onions if you would prefer)
1 small cucumber, diced
Feta cheese, crumbled
1/2 cup sliced black olives

Dressing:
1/4 c. extra virgin olive oil (approx.)
Juice of a lemon or lime (the lime pairs nicely with the avocado)
Pinch of dill
Salt
Pepper

So what shall we make this week? Let's aim for a meal-salad this time, so someone needs to come up with a meat to put on top, along with all the other tasty morsels that will go with it.

(can I say the marinate too??? or is that more ingredients??? Marinate in soya sauce, brown sugar, mustard, ginger and garlic powder)

That marinade sounds fantastic, so yes, you can include that as part of your ingredient!!

I say use soba noodles for your base instead of lettuce.
