A couple weeks ago I made this soup for lunch, and it was heavenly. I basically used this recipe for Baked Potato Soup and added 1 c. frozen corn near the end. I didn't use any roasted garlic this time, and I used a regular onion instead of shallots (or actually, maybe I used leeks - doesn't mater, any of those would do.) It's the perfect soup for a cold winter's day!
