CORN & BEAN SALAD
1 c. frozen corn, thawed
1 c. black beans, rinsed and drained (use a whole can and save the extra for the taco recipe below)
1 avocado, diced
2 tomatoes, diced
juice of 1 lime
Epicure's Chili Lime Sansel (or some salt and pepper)
Toss together and serve.
BEEF & BEAN TACOS
1 lb. ground beef
1 can kidney beans, rinsed and drained
1 pkg. Refried Beans mix
2/3 c. water
1/2 c. black beans, rinsed and drained
Brown beef. Drain and season with taco seasoning and salt. Simmer kidney beans with water and Refried Beans mix. Purée and add to beef. Stir in black beans. Serve in taco shells with your favourite toppings.
|I could eat a whole plateful of that salad, it's so delicious. And if I weren't breastfeeding, that margarita would have been a whole lot bigger!|
