Taboulé

This is one of my favourite lunches, and it's so simple and healthy!

TABOULÉ
1 c. water
1 tbsp. butter
pinch of salt
2/3 c. couscous
1 tomato
1/2 cucumber
2 green onions
1 tbsp. basil or mint leaves, finely chopped
1 tbsp. parsley, chopped
juice of 1/2 a lemon

Bring water, butter and salt to a boil.  Stir in couscous, remove from heat, cover and let it sit for 5 minutes.  Fluff with a fork and let it cool to room temperature.  Dice up the vegetables, toss with the couscous, and drizzle with lemon juice.  Stir to combine everything, and serve.
