I used my standard Cuban tilapia recipe which is just olive oil, Epicure's Cuban Seasoning, and lime juice on tilapia filets. (I used the same idea to make these fabulous Fish Tacos.)
I also made a yummy black bean mixture with cumin, chili powder, garlic, diced tomatoes (red and yellow), corn, red onion, and cilantro (added after everything had simmered for a while.) This is one of my favourite camping side dishes.
Then I topped it all off with some diced avocado sprinkled with lime juice. Tomorrow we're eating the exact same thing, but wrapped in a tortilla to make fish tacos. Mmmmm!!!
