Stuffed Pork Tenderloin Thansgiving

We were at my sister's place for Thanksgiving, and she made a fabulous meal for us!  She butterflied a pork tenderloin and covered it with a mixture of mushroom duxelles, dried cranberries, apples, onions, pecans, garlic, rum, maple spice & maple syrup.  She rolled it up and secured it with toothpicks, then put it in the oven at 375F for 60-90 minutes.  She had lots of the stuffing mixture leftover, so she added pieces of dried bread to it and baked it like regular stuffing for a side dish.  She also made mashed purple potatoes (boiled beets mashed in with the regular mashed potatoes), and green beans tossed with bacon and some pecans.  To top it all off, she made a red wine gravy that was to die for.
