This is what drunk shepherds eat

I told you there'd be nothing fancy until we sell our house, so here's what's cooking tonight:

1 lb. ground beef
1 onion, diced
2 tbsp. French Onion Dip Mix or French Onion soup mix
1 c. beer
1/2 c. Clamato juice
1/2 c. small pasta (alphabet pasta or broken pieces of spaghetti)
1/2 c. frozen corn
1/4 c. carrot purée
5-6 potatoes, boiled
1/4 c. cauliflower purée
1 tbsp. butter
Garlic Potato Topper or Smoked Spanish Paprika to sprinkle on top

Brown ground beef and onion and drain well. Stir in French Onion Dip Mix, beer, Clamato, and pasta. Simmer for about 10 minutes to cook pasta. Stir in corn and carrots and spread mixture into a 9x11" baking dish. Mash potatoes with cauliflower and butter and spread over beef mixture. Sprinkle with seasonings and bake at 350 F for 25 minutes.

If you are my father-in-law, you would add a can of cream of tomato soup to this recipe. He adds it to everything. I add it to nothing.

Picture will be posted later tonight, but don't expect a masterpiece. It's ground beef & veggies topped with mashed potatoes, remember!
