Lettuce Wrap Leftovers

Thank goodness for leftovers! I had leftover beef from yesterday, and extra avocados and alfalfa sprouts from the other day, so I made lettuce wraps for lunch today. Easy, healthy, and delicious - what more could you ask for on a Monday?

Lay a large lettuce leaf on your plate. Put some sprouts, avocado slices, and tomato slices. (Feel free to add whatever other veggies you like.) Top with leftover beef that has been warmed up slightly.
Roll up the lettuce leaf and enjoy. (My lettuce leaf had a rip in it, so you can see all the stuff inside. These are messy to eat, but so worth it!)
