Happy Birthday to me, Happy Birthday to me, Happy Birthday dear Kathy, Happy Birthday to me!
Since today is the big 3-3, I decided to treat myself to a little something special for lunch. I made myself an awesome Southern Grilled Shrimp Salad (and I made the kids hotdogs - a special gift to myself, since it meant everyone ate their lunch with no whining!) I love shrimp, I love avocado, I love lime, I love Tex-Mex, and I love cheese, so this salad was sure to be a hit! (And it was!)
I used this recipe from Epicure:
The only thing I changed was the Fajita Seasoning - I didn't have any, so I used Cuban Seasoning instead. You could probably use the same seasoning for the shrimp and the avocado, so anything like Tex-Mex, Fajita, or Cuban would be awesome.
