Homemade Granola Bars

A friend of mine posted this homemade granola bar recipe on Facebook yesterday, and I made a few modifications and whipped up a batch last night.  The kids were pretty excited to take them to school for snack, so hopefully these can be a new replacement for those cardboard rectangles with chocolate chips I've been buying for the past couple years!

HOMEMADE GRANOLA BARS
3/4 c. brown sugar
1/2 c. butter
1 tbsp. honey
1/2 tsp. vanilla
1 egg
1 c. whole wheat flour
1/2 tsp. cinnamon
1/2 tsp. baking soda
1 1/4 c. Rice Krispies
1/2 c. raisins
1/2 c. unsweetened coconut
1/2 c. chocolate chips
1 1/2 c. rolled oats

Beat sugar and butter till smooth, then beat in honey, vanilla, and egg.  Mix in flour, cinnamon, and baking soda.  Stir in remaining ingredients by hand and mix until combined.  Line a 9x13" baking dish or cookie sheet with parchment paper and press the granola mixture into the dish.  Bake at 350 F for 20-25 minutes.  Cut into bars and don't tell the kids they didn't come from a box!
