Pork Chops with Plums

We tried out lots of new recipes this week, courtesy of my Everyday Food magazine.  Here's a really basic recipe that gets jazzed up with some colourful plums on top.

4 porkchops, seasoned with salt & pepper
1 onion, diced
3 plums, sliced

In a frying pan, heat a bit of oil over medium-high heat.  Cook porkchops until golden brown on both sides (approx. 6 minutes, flipping once)  Set porkchops aside and tent with tinfoil.  In the frying pan, sauté onion for a couple minutes and then add plums and continue cooking for another 3-4 minutes.  Season with salt & pepper and serve over porkchops with a side of mashed potatoes and mixed greens.  (I left out the mixed greens cuz there was already too much food for me, but they sure would have looked pretty on the plate!)
