Stuffed Peppers & Tomatoes

Here's what we had for supper the other night - it was very easy to make, and the whole family liked it (although not all of us ate our peppers/tomatoes!)

1 green pepper (cut in half lengthwise, seeds & ribs removed)
1 red pepper (cut in half lengthwise, seeds & ribs removed)
4 tomatoes (cut the top off and scoop out the inside)
1 c. rice (prepared according to directions; should give you about 4 c. cooked rice)
1/2 lb. ground sausage
1 onion, diced
1 garlic clove, minced
1/4 c. parmesan cheese
1/2 c. breadcrumbs seasoned with salt & pepper
olive oil

Brown sausage and onion.  Stir into cooked rice along with parmesan cheese.  Arrange peppers and tomatoes on a baking sheet and scoop rice & sausage filling into each one.  Sprinkle with breadcrumbs and drizzle with olive oil.  Bake at 400F for 30 minutes.
