Turkey Meatloaf & Enchi-lasagna

It's been a few weeks since I made this Turkey Stuffing Meatloaf from Rachael Ray's Yum-o! Family-Friendly Cookbook. I used some Montreal Chicken Spice instead of poultry seasoning, and it was a lot stronger than I expected so the meatloaf was quite spicy.
I liked it, but the kids hated it.That posed a slight problem for the next night's meal, since I was planning on trying out Rachael Ray's Rollover Enchi-lasagna with the leftover meatloaf. So I just browned up some ground beef instead and seasoned it with Fajita seasoning. Instead of layering it in a lasagna pan, I used my new dutch oven (which I love!) and made sort of a layered-tortilla pie. Again, I loved it, but the kids hated it. I added some cilantro though, and that was the source of all their woes. Sans cilantro, this would have been a kid-approved meal.
